Hey Jerry! So in my setup I ended up throwing a little travel router between one of my Starlinks and my MPTCP router to get a unique ip range. Typically frowned-upon for the double-NAT but shouldn’t be an issue with everything piped to your VPS anyways.
As far as getting stats from each dish, I ended up adding a docker container on a pi also plugged into the travel router pulling my stats into grafana. It’s not graceful by any means and there may be a better way around it by playing with thew routing tables, but has done the trick for me so haven’t really touched it since.
